As far as the cultural side is concerned, when I start learning a new language I'm completely immersed in it up to the point that I want to deepen my knowledge about any facet of the culture (or cultures) related to language itself.
With regard to the purely linguistic side of a language I always seek new ways to boost my learning process as well as raising my degree of fun and effectiveness while learning, so looking for new methods and hints to address any facet of the language is compulsory to me.

I have an obsessive personality and a short attention span. That's why I can rattle off a bunch of facts about any random language but I can't read a grown-up novel in my best foreign languages.

I'll also echo what others have said: I got interested in conlangs so I learned a lot about phonology and grammar from that.
