Wow, Steve! Well done. I always thought that people should start with Koine, it's a good intro to ancient greek. I am not promoting religion here, to make myself clear.

If you are into ecclesiastecal greek, then I suggest you read other texts as well, such as hymns and chants and all that poetry you get during the mass. It's really worth it. You don't only get a text, but also a chant which will help with your memory (not that you need it!). It's just so beautiful. Here is an example

Ἡ ζωὴ ἐν τάφῳ,
κατετέθης Χριστέ,
καὶ Ἀγγέλων στρατιαὶ ἐξεπλήττοντο
συγκατάβασιν δοξάζουσαι τὴν σήν.

Ἡ ζωὴ πῶς θνῄσκεις;
πῶς καὶ τάφῳ οἰκεῖς;

You can find it chanted on youtube in so many versions. This is just an example, but these texts are a source that ancient greek learners don't tap into, and that's a shame. Because it is something current and going on today, if you don't mind the religious aspect of it. But why people should mind? When we read a hymn to Zeus for example should that bother us? Of course not, and if someone is there for the language we should do as Isocrates has written: like the bee, taste all flowers and only keep what's useful.

Ώσπερ γαρ την μέλιτταν ορώμεν εφ' άπαντα μεν τα βλαστήματα καθιζάνουσαν, αφ' εκάστου δε τα βέλτιστα λαμβάνουσαν, ούτω δει και τους παιδείας ορεγομένους μηδενός μεν απείρως έχειν, πανταχόθεν δε τα χρήσιμα συλλέγειν.

Language patzer, I hadn't thought about chants (probably my not so Orthodox upbringing...bad pun :D ). Thanks for the interesting suggestion. For modern languages, I've used songs I like.

A group like this sounds really cool. I'd love to find one for Japanese!

Apart from the assimil course, are there any other courses with high quality audio that uses reconstructed pronunciation? Most everything else I’ve come across has been very “textbooky” if you catch my meaning.

Some members of Textkit might have answers to this question.
It's free to join, it doesn't nag, and some of its members are quite knowledgeable.

Christophe Rico's Polis might fit your needs. You can check out the audio here: https://www.polisjerusalem.org/resource ... -language/

It's not faithfully reconstructed down to the last detail (it uses interdental fricative for the theta, for example), but it sounds pleasant to me and good enough for pedagogical purposes.
