You sometimes hear sentences ending with '... avec.'

I can see a meaning there, but to me the 'avec' seems to be missing a subject. I want it to be "Un losange [les] avec", but it's not!
Web searching for an answer today, I found a word reference thread which tells me that avec at the end of a sentence is an adverb meaning 'with it'.

This "avec" that you hear at the end of sentences has nothing to do with a preposition, it is an adverb meant to replace "with it", in cases where you cannot say "avec lui", using the disjunctive pronoun. (because for example, the "lui" does not refer to someone, but to something).
Example : "je suis venu avec mon frère" -> "je suis venu avec lui" (here, it is ok to use the disjunctive pronoun).
But : "Je suis venu avec mon livre" -> "Je suis venu avec". (When you cannot use a disjunctive pronoun, you replace the preposition + pronoun with a corresponding adverb.) For the preposition "avec", the corresponding adverb is "avec".
Each preposition has got its corresponding adverb.
avec -> avec
pour -> pour
de -> en (actually, EN is considered a pronoun...)
à -> y (and Y too)...
sur -> dessus
etc...

I think both Gallimard (two imprints, La Pléide and Folio) and Le livre de poche would be broadly equivalent to Penguin etc.

Thanks for this. I have the complete set of Proust's Récherche in La Pléide edition (bought in Montmartre in the 80s! the sales clerk called it simply La Récherche) and some volumns of it in the Folio edition. I prefer reading the Folio because its point size is easier on older eyes. Same publisher for a two-volume set of La Guerre et la Paix, easy to read and a sufficient number of backnotes.
My copy of Le Père Goriot by Balzac is Le Livre de Poche. Of adequate point size and with adequate (but not overwhelming) explanatory footnotes. Most French novels that I buy are from Le Livre de Poche.
