Takk fyrir! I'm still pre-A1 in Icelandic but working hard on it. You've covered most of the resources I've found and then some, but I have a couple more to offer...

Re: Icelandic (and Faroese) resources
I was looking through threads on Reddit and a user (@thecanceristhechemo to be specific) linked the below site for math terms, for when you want to teach your kid algebra or teach a calculus class at an Icelandic university Just plug in the English term, and it spits back out the Icelandic one.

Icelandic Etymological Dictionary by Ásgeir Blöndal Magnússon
Free download (albeit 2.6GB). I haven't explored it fully but it looks wonderful. On the other hand it is in Icelandic

Re: Icelandic (and Faroese) resources
I'm not sure what you're supposed to use these for but I found these: https://vefir.nams.is/kaera_dagbok/index.htm, https://vefir.nams.is/kaera_dagbok/index_2.htm, https://vefir.nams.is/kaera_dagbok/index_3.html
They appear to be books full of activities for children learning Icelandic. Not very comprehensive, but you might be able to have fun with them.
