Yes, both Assimil Hindi and Assimil Sanskrit display in Devanagari (and only in Devanagari).

This is very intriguing to me. I would like to do this with my Assimil Spanish with Ease files, but am not quite sure that I understand the process. I don't suppose that you would mind elaborating a little bit or sharing additional information. You say that you can produce a couple thousand anki cards in about 10 minutes. That is incredible! I missed the part where you put them into anki. Is that after you save the .csv file? The method looks really cool, but it is not entirely clicking for me. I am not super techy.
