I also preferred Parli Occitan to the Assimil course (it lost me with some random dialogue about a regional type of roof or some other such nonsense)

Was that the old Occitan assimil or the new one?

Probably the old one (lesson 10). The old Assimil occitan is, in my humble opinion, a really strange course. It's the perfect example of everything that was/is wrong with the occitanist movement. It disregards the people who were actually speaking the language at the time (seen as too rural and not militant enough), while the content is limited to: 1) heavy emphasis on the mythical Shambala that Occitania allegedly was during the Middle-Ages-before-the-French-invaded (the troubadours were great, Occitan was the language of culture in Europe, everybody in Occitania was polite and refined, Sharing/Paratge and similar virtues were practiced by all, etc.), 2) description of cities and material items. There is little in terms of everyday life situations and the likes.
I think it is still a useful course in terms of vocabulary, grammar, etc., but the ideology makes it painful to listen to at times.

I find I'm most interested in Provençal, but the resources for learners simply don't seem to be as robust, whether coming from English or French. I would like the support of a fairly complete course, such as Assimil or its equivalent, and not just a phrase book with common tourist terms and IPA glosses. People seem to rate the content of Provençal pour les nuls highly, but the lack of audio accompaniment is a no-go for me. In fact, it's really the audio I want to focus on, since Provençal looks pretty intelligible when one can already read Latin and French and Spanish.

Manuel pratique de provençal contemporain - Alain Barthélemy-Vigouroux et Guy Martin

A course (over 400 pages) for Provençal republished in 2017. I don't have it myself but I've heard excellent reviews for it from those learners who do. Accompanied by audio.

It takes as its point of departure the Provençal variety of Luberon, but in the style of Assimil, introduces several other Provencal varieties as you go along.

Here's everything about the public mainstream radio and television broadcasting of Occitan in France that I've found so far.

Le journal en Occitan, a 7 min programme at 7:15 pm on Saturdays, and Viure al País a 30 min programme. It shares this time with a Catalan language segment (under the title of Aquí sem), at 10:50am on Sundays. So three times a month.

France Bleu Occitanie has a 2 min segment Les mots d'Oc every morning at 6:10am by Giraud Delbés. He also presents the radio programme Conta Monde at 12:05 pm on Sundays (curiously enough, no songs in Occitan are allowed to be played by order of the radio channel director, only English and French songs. You can check for yourself, they stick to this rule). It's about 20-22 min long.

The radio programme Meitat chen meitat pòrc presented by Joan-Pau Verdier on France Bleu Périgord which is 50 min long, at 11 am on Sundays. On the same radio, L'Oc Express, a 1 min programme at 7:27 am and 4:20pm from Mondays to Fridays.

On France Bleu Béarn you have the 2-3 min long programme Les mots d'Oc presented by Olivier Pedezert, at 7.20 am Mondays to Fridays, and 8.20am on Saturday and Sunday.

If I've missed anything please let me know.

I should add that in the majority of these programmes, it is not Occitan only. For example in Conta Monde the presenter systematically translates the Occitan spoken by him or his guests into French for the audience, and unfortunately quite a few conversations happen directly in French, meaning you're not getting the full 22 minutes of audio immersion you want. These programmes tend to get pushed into weird time slots or suspended altogether, like Viure al País that got stopped for 5 months last year whilst other televisual productions continued...

Fortunately there's the associative networks of radio and TV, like Radio País, where 80% of its 168 hours of weekly production are in Occitan. Radio País is just wonderful.

I have to really recommend Meitat chen meitat pòrc, first because they include the two Occitan dialects spoken in Peirigòrd, both Lengadocian and Limosin and second because it's long so you can get your teeth into it and third it's entirely in Occitan.

There is some Occitan (Provençau) to be heard on France Bleu Vaucluse's weekly show Aqui sian bèn.

Radio País played a large part in making me want to focus on Gascon. There just doesn't seem to be anything like it in any other dialect of Occitan.

You might already be aware of the YT channel of Parpalhon Blau, a young Nissart man who makes videos in both the Lengadocian dialect and the Nissart dialect, often language related.

Here's his most recent video in Provençal with Provençal subtitles, an interview with a musician:

As one of the commentators says:

Era un vertadie plaser d'ausir doas persona parlar en occitan en entrevista coma aquo. Aquesta video m'agrada força bord qu'emplegetz l'occitan per parlar d'autra chausa que de lenga, atrobo qu'aco apound veraiamen quaucaren d'apassionant. En mai d'aquo gramaci per m'agué fach conoiser Nousaire, e osca per teis autras video que son sempre agradiva à n agachar ! Bessai à benleu dins leis aups !

It's nice to see someone using Occitan to talk about something other than the language itself.

He also has an interesting interview with a Japanese professor who learned Occitan:
