Relatively few publishers specialize in dual-language books and it's more typical for the genre to be just one of several offered by a publisher. A good way to find dedicated dual-language texts for your target language is just to run a search in Google with that term or similar. For example:

Czech, Slovak: dvojjazyčné knihy, Finnish: kaksikielinen kirja / kaksikielisiä kirjoja, French: livres bilingues, German: zweisprachige Bücher, Hungarian: kétnyelvű könyvek, Italian: libri bilingue, Polish: dwujęzyczne książki, Swedish: tvåspråkiga böcker, Turkish: çift dilli kitaplar / iki dilli kitaplar, Ukrainian: двомовні книги etc.

The rising popularity of self-publishing via Amazon has also supported the proliferation of numerous dual-language books of varying quality. Unfortunately, some of them come off for me as "machine-translationese" of insipid texts in English as exemplified in some volumes from Skriuwer.com. However, if the book's credits explicitly list a translator, then that's a reasonably strong indicator of the translation being idiomatic. An example of this kind of book would be this self-published dual-language title in German by Paul Reinker and translated to Ukrainian by Svitlana Sinitsyna.

I think the most famous Russian series of bilingual books is the Метод чтения Ильи Франка (Ilya Frank's reading method) series from the publisher ВКН (VKN), which currently has books for learning 64 languages (63 languages via Russian plus Russian and six other languages via English). The books are bilingual in that a full translation of the original text is included, but they're not exactly parallel in that the translation isn't really separated from the original text. Instead it alternates between passages of the unaltered original and passages where the original is interspersed with translated sentences, often with additional explanations. They also have two spinoffs, the German-based easyOriginal (learner languages: German, English; target languages: English, French, Italian, Spanish, Russian, German) and the Polish-based IFrank (apparently only English via Polish).

I'm also aware of a more conventional parallel text publisher called МАГИ "Из века в век" that published compilations of 20th and 21st poetry in Slavic and Cyrillic-using languages with poetic Russian translations. Unfortunately the publisher doesn't seem to exist anymore and I haven't been able to find a complete list of books they published.

It's indeed a shame, I lived in Brittany once and even then I couldn't find much (I wasn't learning the language, true, but I was curious enough to try to look for it)

I couldn't find a proper website but the publisher Dilúvio has several bilingual books of Portuguese poetry. I have the book "Poems by Amalia Rodrigues" which is bilingual Portuguese and English and I love it. Their books have translations in Spanish, Italian and Japanese too. It seems to be quite an indie publisher so not too many titles.
