I see from a recent Reddit posting that the Australian National University has made textbooks for Tibetan, Japanese, and Sanskrit available for free download here:

Looking at the descriptions, they're all in epub format, but are very large files, because they contain multi-media as well.

I only wish they had chosen alternative formats too, like a .zip file with all individual files!

Epubs are basically just a zipped collection of CSS, HTML, images, videos, etc. You can extract them into their component files using a standard utility - 7-zip works on Windows.
