I'll second AnthonyLauder's recommendation of "D'accord" for French learners; it's really VERY comprehensive, despite the high price of the book if purchased new. (I found a reasonably priced used copy to digitize, which softened the blow somewhat.)

For Arabic, I'd recommend the FSI Lebanese Arabic "course", which is really just a long workbook, with audio, on the sounds of the language. There are lots of practice exercises as well as exercises to determine how well you can discriminate among the different sounds.
