The French medschools have very clear book lists.
Prépas, which are equivalent to some lower level degrees in other countries, have books named like "maths for": and an abbreviation. Finding out the abbreviation of what would you like to independently study, that is sometimes a bit complicated.
As the best source, I'd recommend looking on the internet and finding forums, or fb groups of the students of a degree you are interested in. And ask, whether they'd have recommendations or lists.

Not quite what you are looking for - but first year students studying French at Cambridge are expected to read/watch these:
H. Walter, Le Français dans tous les sens (Laffont)
Renaud de Beaujeu, Le Bel Inconnu (Paris: Champion, 2003)
Pierre Ronsard, Les Amours (1552-1584), ed. Marc Bensimon and James L. Martin (Paris: GF Flammarion, 1981)
Sonnets pour Hélène, Books I and II (pp. 261-314)
Corneille, Horace, ed, Jean-Pierre Chauveau, Collection Folio Théâtre no. 16 (Paris: Gallimard, 1994)
Laclos, Les Liaisons dangereuses, ed. Joël Papadopoulous, preface by André Malraux, Folio Classique, 894 (Paris: Gallimard, 2006)
Honoré de Balzac, Le Père Goriot, ed. Stéphane Vachon (Paris: Le Livre de Poche Classiques, 1995)
Agnès Varda (director), Cléo de 5 à 7 (1962)

Re: Reading List for French Universities
That's a really good idea, I like it. Searching liste de lectures obligatoires sciences humaines/politiques (or another subject) got me quite a few uni sites that might be useful.
Some of these lists might be interesting:
https://www.letudiant.fr/examen/concours-sciences-po/huit-livres-pour-preparer-sciences-po-12479.html
https://www.sciencespo.fr/actualites/actualit%C3%A9s/que-lire-cet-%C3%A9t%C3%A9/3714
https://www.sciencespo.fr/actualites/actualit%C3%A9s/les-livres-qu%E2%80%99il-faut-avoir-lu-sans-les-lire/3108
Or finding an academic in a French uni whose research interests match yours and then just reading their works?
