Open Textbooks in French (and other languages!)
I know in English there are a number of open textbooks which are free to download and use like the ones at College Open Textbooks. Is anyone aware of a similar initiative in other languages? I'm specifically looking for French at the moment, but I'm sure many people would be interested in other languages.

Les Ronces mentioned a french YouTube channel that has videos on many subjects.

Archive.org would have out of copyright works too.

Liberté, a French textbook - Used in many colleges, free textbook for download or purchase print-on-demand.
Français interactif - University of Texas, free textbook for download or purchase print-on-demand.

The best site I know for free French ebooks is this one:

However, they are not textbooks. I rarely use text books in e-version.
With a quick search I found these sites for free French textbooks. I don't know how good they are.

I see that I misunderstood your initial post. I thought that you were looking for textbooks that teach French, not textbooks in French that are about other subjects. Such as a textbook on histoire. I could not find free textbooks in French, but here are two YouTube channels in French:

Doabooks.org and oapen.org has some books in French as well as some other languages.
I had lelivrescolaire.fr bookmarked but I haven't looked at it yet.

Excellent stuff for those who are interested in natural sciences. I have made copies of 9 pages for intensive study, and that's barely scratching the surface of the second site.
