I'm interested in watching some Spanish soap operas, preferably with Spanish subtitles and of Mexican origin (maybe Columbian or other SA areas as well). I have an intermediate level of aural comprehension of Spanish and would like to improve it by binge-watching an addictive series or two.
I'm looking for show recommendations that might be a good starting place. Also, advice on the best way to watch in the US. Is buying a box set of DVDs the way to go, or are there services that make shows available in sequential order online? I'm not much of a TV person and know very little to nothing about what services are available. I won't use a VPN, so the content must be available in the US.

Many of the streaming services have a Spanish section of some kind. Netflix has a Spanish language section, Hulu and HBO Max both have Latino sections. Pantaya is all Spanish with subtitles available in Spanish and English. Pluto is free service with commercials and has a Spanish category.

I have some kind of add-on on my satellite TV receiver in Germany that receives the PLUTO TV streams for a number of countries (also Mexico), I don't know how this works technically and there are other ways ro receive Pluto TV on PC, with a player ...
There is tons of material and it's free. You can see what is on offer here (scroll down):

They also seem to have subtitles, which I don't get on my receiver. The quality of sound and picture is very good
