The Assimil Edition for French is a good start I think! (I really liked it to refresh the skills that I had left from school).
Further more I woul recommend you to a) use texts that reflect your interests - simply because this enables you to connect the new informations to preexisting knowledge and will also be more motivating. b) work actively with the texts - put effort into "decoding" the texts. Ask questions, make notes, write summarys, talk about the texts, blog about the texts (in French, indeed)...

Has anyone used Stack's Reading French in Arts and Sciences or Brickman's A Short Course in Reading French? I have Sandberg's French for Reading Knowledge, but it is back in the states in storage and a) I'd rather not rebuy the same book and b) I'd love to have one on Kindle (Brickman's is).

I haven't used either of them, so I can't be of any help there. Just to mention a couple of points. First, unlike French for Reading, none of these books have an answer key. Second, from a simple glance at the number of pages, French for Reading seems to have far more content.
On the other hand, all three books have very positive reviews on Amazon.
