When I get the opportunity, I like Grand Reportage on RFI - current affairs documentaries from around the world, about 20 minutes long.

Accepting that the definition of 'interesting' is somewhat subjective, and accepting a broad definition of 'podcast', these are my favourites in each of my TLs...

French: Portrait de famille - classical piano music with erudite and entertaining commentary
Italian: Veleno - a seven-part audio documentary about an investigation that went horribly wrong
Greek: The Brain Hacking Academy - pop psychology, 'how to be the best version of yourself'
Icelandic: Í ljósi sögunnar - mini-documentaries on historical events, covering a huge range of topics (and spoken nice. and. slowly)

Here's some of my personal favourites:

German:
Geschichten aus der Geschichte (two historians chatting about history)
Servus Grüezi Hallo (newspaper editors mostly discussing current events)
Deine Welt (interviews with various people)
Systemfehler (discontinued; started with computer glitches, continued to all sorts of other "errors")
Forschergeist (in-depth interviews with scientists)
Rechtsbelehrung (discussions on a wide selection of legal topics)

French:
CQFD (various science related news)
La méthode scientifique (some as above)

I still have a hard time following free-form podcasts that aren't in English, so most of mine tend to be documentaries or history series that have a linear narrative. Currently these are:

French
Au coeur de l'histoire - Always entertaining and informative
Avant demain - Discussions on the innovations that are transforming the world.

Italian
Storia d'Italia - Currently on the final days of the Goths in Italy
Lezioni e Conferenze di Storia di Alessandro Barbero - A series of lectures by Italy's rockstar medieval historian. (editorial note: I wish the US treated academics like rock stars)

Spanish
La Historia de España - New, only 17 episodes. Transcripts are available if you donate on patreon. Currently on the reign of the Visigoths.

Así Como Suena - Investigative journalism out of Mexico
Just added: El Quijote del siglo XXI - A dramatization based on a book by Julio Llamazares. The available episodes start with Quijote's third adventure.

iTunes charts is a good resource for searching for new podcasts; they list the top podcasts each week in nine countries.

Transfert from Slate Audio (FR). Extraordinary and intimate stories told by the individuals themselves. Sometimes funny, sometimes incredibly sad, sometimes uplifting. Cannot recommend it enough.

GERMAN

DeutschlandFunkNova (I recommend Einhundert and Eine Stunde History) and NDR Info have a lot of podcasts to choose from.

ROMANIAN

Radio România Actualități also offers some podcasts, though most of them are about current affairs (Agenda Globală).

On the record provides some in-depth analysis of today's Romania. Then there is Istoria României and The Real You (about psychology).

I'm not sure this is what you are looking for. Ivoox has a selection of broadcasts in Spanish. It has an app as well.
Something sort of similar at France Culture. And Radio France has an app.
But maybe you wanted specific suggestions? In which case, what specifically interests you?
