I've made a list of languages I need/want to learn (actually three lists) and ranged languages by priority. Sometimes, I do get an urge to jump straight to Arabic or Sanskrit, but having a good idea on how much time one needs to get a language to a usable level helps me to control such impulses.

I don't bother to try to contain my wanderlust anymore; sometimes it better to just go all out and just study 5 hours of the language I'm interested in for the day and then tell myself I don't need it afterwards. If I don't allow myself the chance to dabble, it just makes the new language seem all the more appealing. After I burn myself out, I just go back to my previous routine.
