As is often common with minority languages, there's a huge paucity in Irish material geared towards learners at certain levels. To correct that, I was thinking of sitting down with the A1 (and eventually others, but mostly focusing on A1/A2 at first, since past that a lot can be done independently) syllabus and creating a course/workbook based off it. Anybody done anything similar? Any suggestions on how to start? Any highly recommended ones you suggest I look at?

I'd look at a grammar and pick my content from there. If there is a language institute, a lot of times they'll have a list of what skills or grammar topics you should have for each level. Another option is looking at language schools and seeing if they have a list of topics they go over for their classes.
