Is there any good, fun and light book in modern speech where I can read these stories? In either German or Bokmål please. Even better if illustrated.
I've not read these yet, but I've put some versions in my wishlist of books to read:

Arte.tv have a doccy you might like: Das Nibelungenlied.

EDIT
ZDF.de have a documentary: Große Mythen aufgedeckt - Das Nibelungenlied.

EDIT2
Ard have a radio adaptation: Der Ring des Nibelungen

Völsunga saga is the nordic variant of the Nibelungenstoff, here in Bokmål (somewhat shortened): http://heimskringla.no/wiki/Sagaen_om_Volsungerne
There is a German fantasy adaption of the Nibelungenlied: Wolfgang Holbein - Hagen von Tronje
